I’m back! Took a little hiatus from social media. Mixed green & herb salad with apples, avocado & pecans, raspberries and @udisglutenfree toast with avocado, s + p & red chili flakes.
Lunch for school today 👌 salad with spinach, chicken, feta, cucumber, tomato, onion, bell pepper, avocado and chickpeas! For dressing I’ll use equal parts avocado oil & balsamic vinegar.

•Two collards (make sure to cut the stem) •Shredded carrots •Avocado •Cherry tomatoes •Radishes •Cucumber •Sprouts •Spinach •Purple cabbage •Romaine lettuce
And I topped it all off with some cayenne and red pepper flakes because I love everything spicy 👌and a *raw* vegan pesto out of cashews, kale, spinach, raw garlic and pink salt. ✨ -

I’ve just recently learned that cashews aren’t considered raw because of the process they go through to become edible. I’m also learning that the workers earn a pittance for harvesting cashews, and many of them have suffered permanent damage from the toxic liquid that the shells release…so, after learning this, I think I’ll have to stop purchasing them for the greater good. 💛 I hope you all enjoy this recipe! I had so much fun creating this beautiful burrito, and even more fun eating it 😋
My very random post workout meal since I haven’t been able to go grocery shopping yet after getting home! Steamed broccoli, ‘Eat smart’ kale salad with raw pumpkin seeds and Panera poppyseed dressing, then scrambled eggs (seasoned with mrs. Dash chipotle southwest and pepper) with red bell pepper and toast 👌 so good!

Once upon a time, Caitlin was planning on making some delicious quinoa and lentils to have for lunch. In a sudden twist of events, she forgot to watch the pot and let all of the liquid boil away, resulting in an absolutely scorched cooking utensil 🙄Luckily @rightfoods was there to save the day – she whipped up this Sweet Potato Kale Quinoa Salad in 7 minutes flat, threw it together with some veggies and a drizzle of @shirleybarliving tahini, and even made it to her meeting on time!
